Even for hardcore souls fans I could see the use of a easy mode where on a second play through you could spend time exploring the world and artifacts without worrying about being gutted.

You think lowering the damage output of enemies and increasing the player’s is difficult to code? I really doubt that. It’s most likely a numerical value that can be tweaked as needed.
Extreme difficulty often isn’t fun and heck, I know even Dark Souls players agree with that. I’ve read blogs of people who’ve played the game and they describe being stressed out, frustrated, etc. Yeah, there’s the sense of accomplishment once you clear the challenge but that’s just not the experience everyone wants.

I don’t really see much of an argument in whether a game should be limited to only a hard mode (dark souls) or an easy mode (Pokemon). If you want to play hard, flick the difficulty up, if you don’t, flick it down. Limiting a game like DS, to its difficult gameplay, does in fact limit the audience.
