Not quite. Marty's family being different shows the timeline can be changed. That being the case, there was an original timeline in which Doc didn't meet Marty in 55, and they met and became friends in the 80s. Then the alt timeline in which Doc did meet Marty in the 80s.

The original timeline actually does get changed, and the proof is in Marty's family. Therefore since you can change the timeline, there was the original timeline in which Doc did not know Marty in 1955 and their friendship developed in the 80s, and then the newer timeline in which Doc did know Marty from 55.
