I've been using a Bamboo Pen/Touch for over a year now. I don't get all lion gestures on it, but I actually barely touch the magic mouse these days. As a graphic designer, when i'm going to do actual work, I use the stylus. And at home I usually use the trackpad on my Macbook.
That's why I'm saying that the Wacom Stylus will do that just fine. You don't need 200 points of pressure to take notes.
I really dont see myself doing ANY professional work today on a tablet that is not a rough sketch. And for that I like to use a way more advanced tool IMO - the pencil. For the digital part, wacom tablets plugged in a powerful computer (read - a desktop) will do the proper trick.
Wacom Bamboo Stylus ALSO makes this product a nonsense buy.

Well, the iPad is not a professional computer. It will never be. But it's an awesome day to day basis computer to keep close and help you with stuff. Including work.
