IIRC it was always going to be 2d, and sprite-based at that, because of the roots in the original Legend of Zelda. At some point they did transition from 8-bit graphics to GBA-ish graphics, though.
Um, sounds like there might be some confusion here. Rebirth is more than just a console port, it's a (very) updated rerelease of the original and isn't available on anything right now. We've been waiting for it on PC too.
The weird part is that it seems like they're getting rid of the parts of the story that justify why the game is happening. It might be something that they're saving for later, but they haven't said anything yet, and that's a bit troubling.

Pretty sure the Metroid explosion is actually a Mega Man death. The skull makes me think Jet Set Radio, though that might just be the music. After Silent Hill is the Virtual Boy.

The Early Access version comes with an updated version of the tech demo — look for Next Car Game Tech Demo 2.0 in your games list, or something like that. And trust me, it's even better than the free one.
At the end of Super Metroid you can save some animals from the the planet when it explodes, the same animals that teach you about wall jumping and Shinesparking earlier in the game. Saving the animals takes more time than not saving the animals, so speedrunners usually don't do it.
