Big fan of Junkrat against Reinhardt. Toss a mine either over or just in front of the shield when he's advancing and pop it to send him flying and leave everyone else exposed. Then again, I'm super amateur and end up getting killed a lot soooo maybe this isn't the best strategy? But it's definitely a fun one.
