You could use some veggie sausage of course... I love the FieldRoast maple “sausage” but you could also just pan fry some walnut pieces with fresh rosemary and salt and throw that on top when you are done cooking.

Even as a kid I loved when my mom made stuffed squash or stuffed zucchini. Fill that squash “boat” up with Italian sausage, chunks of tomato, bread crumbs, garlic, and top it with some grated cheese. So damn good.
