Eh, if you have cabinet and counter space for slow cooker, you can add a sous vide setup no problem, and just use it_like_ the slow cooker, allotting it counter space when needed. So this is not a real reason, it’s an “I just don’t want to” reason, which is fine, but let’s call a horse a horse.
