Technical Pedant: it’s not the orbital eccentricity that makes a transit rare; it’s the orbital inclination. The planes of Earth’s orbit and Mercury’s orbit are at different angles, so things don’t always line up (similar to the way we only get solar eclipses occasionally, instead of once every moon orbit).
