I have no idea if she does have more names, we just know that her given name is Princess Carolyn in full, both parts being one whole as she's never just referred to as Princess or Carolyn. I'm considering if the Peanutbutters have a unique thing to them given we do have someone who is called Cuddlywhiskers as one word

No and why would they? Her name is Princess Carolyn, it'd be like someone ditching the first syllable of your name yet finding nothing wrong about it. Mr. Peanutbutter's first name is Mister but it's just more practical to call him by his whole name, not sure if PC's first name is therefore Princess but I reckon not.

You aren't alone in that, I feel like Mr. Peanutbutter was more of an active antagonist in those first few episodes rather than the chipper successful guy whose mere presence is antagonistic to BoJack he becomes later.

We say the same thing about America's odd infatuation with James Corden.
