Yep, laziness. It's also set in an environment using mostly 17th Century German architecture, and almost everyone has ethnic European names. Clearly post-apocalyptic Japan, featuring an all Japanese cast is an accurate adaption. Lazy.

Well if you missed out on the Clone Wars series, I'd recommend starting there. It's MUCH better than Rebels so far. If you do check out Clone Wars, either stick with it through the first season, or just skip it all together. It's one of those shows that gets much better as it goes along.

It could be teleporting in the extra mass or drawing it from the time vortex, or fabricating it through block transfer computations (basically building it out of math, which is what the TARDIS is made of). The physics of the Doctor Who universe offers plenty of ways to introduce new mass to an object.
