Took me two tries to figure out the trick. Just keep distance to force him to leap towards you, get two hits in when he lands, then roll away. When he turns into his second form, you just continuously circle him close in and to the right and he can’t hit you.

Guys, I think you’re missing out on the obvious best use of VR.

Nah, it’s completely doable and it teaches you to dodge. Just do 19 damage at a time.
