The “Pixel Remaster” versions of I-VI are pretty close to what you’re asking for - not exactly at the level of visual lushness of Octopath, but they look really nice.

A Switch + Nintendo Online “Expansion Pack” subscription is probably your easiest bet. Mario 64 is also present on the Super Mario 3-D All-Stars cartridge you can buy for Switch (it’s out of print but still widely available).
