Going 100 plus is dangerous on an unpredictable road with such varying levels of driving talent. I agree. But a bit less like 70 should be fine. Ever driven on the Autobahn? Very safe highway, and speeds are huge. Again, a little speeding on nearly empty roads? Who cares. Again, 70, not 100.

If you are so afraid of crashing stay off the road. There is no difference between 55 and 70 on an empty freeway. Pay attention to your driving and be sensible.
