Season One Damon DID have his humanity off. He turned it off in the 1950's to suppress his guilt over leaving Enzo behind when they were held captive for experiments by the Augustines.
Enzo's going to end up falling in love with Sarah. That's the point of the whole arc.
Either it's for real, and his actions end up turning her off so bad that she turns her humanity back on, or he's faking it, with the intention of doing exactly the same thing - pissing her off so badly that she turns her humanity back on.
