Combat in Mass Effect is what has aged the worst, especially comparative to ME2 and (especially) ME3. Some of the design choices they’ve made are certainly odd, and seem more like meddling than actually upgrading, but if they can tweek or update combat enough to be close to 2 or 3, then it’ll be worth it.
Well, that is certainly an unpopular opinion.
The foreboding rust-colored sky in the original is being caused by Sovereign; it’s far less foreboding in the Legendary version, and ultimately kills the mood. Visiting it in ME3 is much more indicative of how the planet is under normal conditions, but it actually looks like it should in ME.
The Mario sets give me hope that we’ll get a few Zelda sets in the future.
Nothing of value is missed without Pinnacle Station. Multiplayer is a bigger loss.

No fucking way; it’s been years since I’ve played ME3's multiplayer. I absolutely loved the weekly events they used to do; I might have to hop on and play a round or two.
