To be fair, it was a fellow professional cook who used the “knife shredder” every day before service.

I’ve been using my stones for 6+ years and still wouldn’t consider myself a pro. Sharper than one of these? Sure. Sharp enough to shave? No.

If you only use them sometimes, I’d say you can’t ruin a knife, but I have seen knives that have been so over sharpened that the blade shape changed to an unusable condition. Like a chef’s knife shaped till the edge was visibly recessed below the bolster.

Plastic and metal hotel pans in varying sizes, also. I use them to cleanly thaw meat, soak my sharpening stones, I have a metal perforated pan in my grill so I don’t have to light as much charcoal for weeknight grilling.

And airplanes assuming you pack the foods you’re allowed.

Along the same lines: If you’re just starting to build you’re appliance collection, get a stick blender before a jar blender or a food processor.

Another tip I don’t see mentioned anywhere is par cooking.
