Peace Walker's the direct prequel to 5! If any are skippable I'd argue it's 2, (not because it isn't a great game, which it is) but because I think it'll provide less of a prologue for 5. PW is where the foundation is laid for the destruction at the start of 5.1.

I'm somewhat worried about the glut of games and instant backlog I may be hit with. I'd recommend MGSIII. It steps back on the crazy and tells a more contained spy story (although there's still a touch of the crazy espionage on the side).
