I have some steel plates they threw out at work that I use as jack stand plates.   Large disc brakes from old replacement jobs can work too provided that they are large enough for the jack stand to sit on them securely.

Might be a weird sticking point, but for $28K, replace the headliner, especially since you have the parts. When someone represents a car as being well taken care of and fails to finish a relatively simple repair, I am skeptical about their other claims.
