It’s not that weird to me. Is a small amount (comparatively) and powdered mustard is a great umami flavor. I’ve def added dry mustard to tomato-based dishes and it came out great. 

I agree egg noodles or vermicelli is gross.  But the rest? Fat, salt, pepper, and a tiny bit of mustard spice isn’t that far off from a normal red sauce.

It is amazing how all the “foodie” favorites are gross, bitter flavors. There’s got to be something to that, besides gatekeeping.
