I don't know too much about them, but basically anything that's killed kosher was killed as fast as possible under humane conditions. I'm sure there are also horrible butchers who took the job because serial killer doesn't pay well.

City markets, meat markets, butcher shops. In my experience, this stuff is actually CHEAPER than the grocery store option too. It might be different in urban sprawl type settings, but I'm not exactly living in the middle of the backwoods here either.
