Most of the relevant settings are presented automatically during the install process. To be fair, if MS made them all opt-in, they would get zero data (because nobody would bother opting in) and that would not help them advance their OS at all.
Actually, to be fair, they did ask you if it was okay—most of these options are presented during the installation. They’re just turned on by default (and don’t explain what they do in a ton of detail).
Personally, I’m with you. Computers and smartphones exist to make our lives easier, and that’s what most of this stuff does. I do wish Microsoft would have refined some of their language, particularly on that one setting, but I personally have no problem with the rest of this.
The less you let the system know about you and your habits, the more generic an experience you will get. Some people want this. I want a customized environment.

I hope the knights drive cars dressed as knights. Like, there are police cars for knights. And there is a knight-driving-cars chase sequence with the police knights shooting out the windows as they’re in hot pursuit. There should be walkie-talkies, too that the knights hold up to their helmets.
When World of Warcraft was first released the plan was to do a new expansion pack every year, but that of course changed. If they can get back to that they’ll at least enjoy the expansion spikes on a more regular basis, which will be good for the more dedicated players in the long run.
