You can do good stuff with the boneless skinless breast. The brined-and-grilled chicken breasts we did for Foodspin are amazing. But, you're right: Thigh meat is where it's at, and it's crazy how few people understand that.

I will never understand people's obsession with boneless, skinless, tasteless, moistless...uhhh...something else with "less" on the end of it, breast meat. Thigh meat is tremendous, and if you can find the elusive but always cheap chicken "quarter," those are the absolute BEST.
