For richer flavor, fry the spices and curry in ghee (clarified butter, but vegetable oil would also do) and chopped onions before adding the chicken. And definitely use the dark meat. Chicken breast would probably cook too quickly and dry out.
And the other side of the coin is that schools (at least here in NYC) are cutting back on arts programs to make room for the extra STEM courses during the day. Talk about being short-sighted.

Disagree with you. Art + Science helps produce are more well-rounded individual. And I have always been a heavy “science/tech” person even since grade school who wished he had more exposure to the arts.

I actually agree with you. I’ve learned (the hard way) that a battle of wills isn’t healthy or helpful. I do try to reason with my son and understand where he is coming from but it really is difficult as he is not very verbal. I’m sure it’s different with near-typical children.
