No, it will not wipe the SIM. If you're not reusing it, I'd suggest destroying it. A little fire or a drill will work quite nicely :)

The ION is usually paired with the Atom due to it's ability to decode 1080p video on it's own. The Atom just doesn't have the horsepower to handle doing that smoothly and running the system at the same time. If you're installing a graphics card, go with an NVidia because most HTPC apps can use VPDAU to decode 1080p

They're not too bad. Admittedly, I don't sleep with my headphones in much, but the couple of times that I have, it's never been a problem. They have the rubber gasket-style ear inserts on them, so they block tons of outside sound.

+1 for the s4's. They have an s4i with the mic/controls to work with iPhone and some android phones. The sound quality is AMAZING for a sub-$100 set. They're fairly isolating, so if you're looking for something to go out running with, you may want something else, as you won't hear much in the outside world.
