Tomatoes and ketchup are not interchangeable. One does not preclude the other. It’s like asking, “why do we need cheese when we already have milk?” The traditional burger of cheddar, ketchup, mustard, (dill) pickles, lettuce and onion is a thing of pure joy, even if I also like other combinations as well.
