The last two seasons have definitely suffered from the missing episodes, but D&D have never shown they had the skill to fill them (see Dorne). It might just be better to have this shortened ending then have them try and fail to fill in the missing pieces.  To be fair, GRRM hasn't been able to wrap it up either.

The production values are very let in the first season due to budget issues.  It does get better, but it really is a product of it's time.  It also has a weird ending structure because it got unexpectedly picked up for a final season.
