Ang Lee did a marvelous job, M Night would've been a fantastic choice to direct too. He has South-Indian heritage (from the same area the Pi character is from), his films often have overt statements towards spirituality, and his deliberate sense of pacing and aesthetics would've been a perfect match to the material.
