Well, if Alton is right, I'm doing my scrambled eggs all wrong! I don't recall where I picked up the tip (some TV chef I've no doubt), but I always cook them for a long time over very low heat, which makes them nice and fluffy. He says to cook them really quickly over high heat! *flails*
