Shutter Island is great because the twist at the end may or may not be true, and you have no way of knowing.

The funniest thing about Michael's hatred of Toby is that it was totally inexplicable. When they turned him into Jerry, you began to wonder if perhaps there was a reason Michael found him so loathsome.

Going back and watching Diversity Day, I was struck by how consistent Oscar's character was from the very beginning. He's always been weirdly defensive, brittle, and sort of coldly intellectual, but in an endearing way.

One of my favorite callbacks in the whole show is in Season 4, "Dunder Mifflin Infinity," when everyone is calling Ryan "Fire guy!" and Andy gets down on his knees and pretends to be spewing flames with his mouth. "Fiiiiiire guy!" Cue Kevin: "Hey, you weren't there for that!"
This and "The Initiation" (Pretzel Day) might be the show's two most representative episodes.
