Do you know/use any cookbooks for Italian American that you can recommend?

My Mom gave me her copy of Hazan's first cookbook after I came home from seeing Big Night, all jazzed about trying to cook Italian. I read it cover to cover, like a book, and cooked from that for the next two years.

All that was left of her was this little green globule.

Exactly. I don't see what advantage knowing the proportion of bone to liquid is over just, "Throw a bunch of bones and trimmings in the biggest pot you have, cover with water, simmer overnight."

Did you watch the Mind of A Chef episodes with him? They were fantastic.

there's a whole cookbook called Food and Memories of Abruzzo that you might want to check out if you haven't already. It does commit my pet peeve of including recipes and dishes outside the subject of the book, but the Abruzzese stuff is fairly unique.

I just read Meathead last month and immediately started putting those principles to work, and it made a huge difference. The reverse sear/indirect grilling in particular hasn't failed me yet.

Yeah, the spamming with other products is still going strong. I get an email from one of their entities almost every day.
