It was an aesthetic decision to capitalize the N and the C, I'm sure.  Technically, to mimic the stylized HawthoRNe capitalization, it should be "CancELs" because E and L are the next to last letters.

I didn't like that he changed the song, but I did like how they showed celebrations going on all over the galaxy.  In the original version, they just freed the entire galaxy from the tyranny of the empire, and it's just a few humans partyin' up in the trees with some Ewoks.  I didn't like the fact that he changed it…
