He was writing for Serious Eats about cocktails for a while, so you can look him up on that site if you want to see some of his stuff before buying a book. I use the food lab's recipe for gnocchi all the time. As long as you can get a good quality ricotta and you have a scale, everything else is super easy.

Saute in butter until it's soft and ever so slightly charred. Then turn down the heat and add about 1/4 cup of cream. Cook that until it reduces into a sauce instead of cream.
