I've been lucky enough to eat at a few great restaurants. But the dishes that stand out the most are the ones that are the most surprising. Something like a clarified consomme, that looks almost like water but hides a burst of flavor. I'd love to eat at Alinea one day for that reason.

Awesome! It's great stuff, but I suggest moving what you don't use into a small container and freezing it until you need more, as you only need a little bit, and it'll spoil before you use it again.
