I make this frequently during the summer. The most recent time, instead of cotija, I used this french feta I had on hand, and it's so much better!
So, my suggestion is try swapping out the cheese and see what you like best. I'm never making it with cotija again.

You could do it with a whitefish, but as was done in the article (and in other recipes I've seen online), salmon works very well for this dish too, whereas tilapia is very lean and any flavor of the fish will be completely lost here.
