Up until that final elimination, Katsuji was never flat out hostile to John. He had a personality that was annoying, but that seemed more like he was joking with everyone (at their own expense). So maybe John thought it was friendly ribbing, rather than sabotage and hostility.

I just perused the book on Amazon. It looks like they're talking about Arrack, which is a southeast asian alcohol that seems closer to rum. Arak is a middle eastern alcohol that tastes like anise/fennel. Similar to / exactly like Ouzo. I haven't tried Arrack, but that and campari would probably go together much better.

Like most radishes, it also had a sulfuric, or "farty" taste. I'm still trying to work out how best to pickle them. I'm trying a lacto fermentation on some breakfast radishes right now. Haven't tried them, but they're definitely ready to eat.

I can't remember if it's that book or his other one, but the recipe for polenta with eggplant is amazing.

Interested in the mushroom dish. Does it use a certain type of mushroom? A mix of them?

Years ago I tried quick pickling watermelon radishes. That was a stupid move. The brine leeched the color away and distributed it evenly, so everything was the same pink color.

Does it cut the sweetness with more of a fatty taste? I can't say I've ever tried that combo.

Check out sites like penzeys or my spice sage. I buy the vanilla beans in bulk now, because if not, yeah it's super pricey.
