I agree! For best results when roasting, cook the thighs covered for 45 minutes to an hour first, and then cook uncovered until they're finished. This will allow for a nice even cooking of the meat AND give deliciously crispy skin. Just make sure you baste them a couple times and they won't dry out.

The other day I took some chicken thighs, and marinaded them in lemon juice, lemon zest, mustard, white wine, olive oil and soy sauce. I then rubbed dried sage, rosemary and basil into the skin, and slow-roasted them in the oven for a couple of hours. Made a pan gravy from the drippings and sauce.

I tend to enjoy "fast casual" chain restaurants - Chipotle, Panera, Fat Bastard Burrito, etc. The ingredients are fresh, and it's not like they're advertising a fine dining experience in the first place. They're great place to pop in on a lunch break or when running errands or something.
