Yeah, all of the chefs are self-centered up to a point, but Kerry doesn't seem to give a rat's ass on how the other chefs are handling stress, even when it is clearly his fault.

I agree. He truly is taking care of Nick for some reason. I believe he's concerned for Hank's life so Hank can be okay to take care of Nick. And Renard saved Juliette's life. (Granted he did that so Nick wouldn't leave the city.)

I agree that Nick having an all-around support team will help with the rest of the show and its plot points. I like where it is all heading and am actually, as you say, "cautiously optimistic".

I was thinking the exact same thing about the monologue. After he finished (and I fist pumped with him), I thought, "That speech was so reminiscent of "Pamela," and I LOVED that.
His pour-out-my-heart speeches are fantastic because he puts realism in them as well, and that makes them even more endearing somehow.

I like how they played his anger off. You thought that he would be mad about some part of Hardison's game-plan, but really, he was pissed about all things microbrewery.  Awesome.

AMEN on Point #2. That dinner party was the hottest scene this side of the Missisippi. I'm still blushing over how delicious it was to watch!
