In CO, venison is only made into jerky. They eat sagebrush, and goddamn does that make it into the taste of the meat, typically prepared. But, I'll be damned if the right person can't season it into perfect jerky (duck too).
Where I grew up in western Colorado, there are both cattle and sheep ranches, predominately cattle. This is due to profitability of course, driven by consumer demand. But it's an interesting question as lamb, to me, is clearly better.

What does an average lamb dish cost in NZ at a nice restaurant? I'm looking at $30-45 here in CO depending on whether one is in a resort town or not.
I think that's exactly it. I happen to live where the beer flows like wine (not complaining, not bragging) and the lamb dishes always outshine the beef ones in the restaurants here.

Yeah. I really think it's a price thing. Also, apparently lamb has a higher environmental impact, though I can't see how that factors into the average consumers' choice yet.
I also think that cattle ranching being one of the primary industries in western US expansion in the 19th century conditioned peoples' tastes.
I live in Colorado which has, arguably, some of the best lamb in the world (NZ would be the other). That's an interesting question. It's more expensive than beef is my guess.
