His talking head showed him using a waterstone, Japanese-style. Japanese chefs often use the fine stone the way Western chefs use a steel. Considering the huge Japanese influence in Hawaii, that might be where he's getting it from.

Guess I'm in the minority, but I found this comment to be the first likable thing he's said all competition. Sad, since the Kevin Gillespie Halo Effect makes me want to like all pudgy meat-lovin' beardo cheftestants.
