I left out the Bacon, but the smoky Gruyere made up for it. I also added about a cup of cherry tomatoes fresh from our garden.

Last week I mad an amazing Caramelized Onion Mac & Cheese with smoked Gruyere. So delicious. It was the perfect comfort food when I get inexplicably cold after being so goddam hot.
