My explanation:  Changelings regularly absorb mass from the environment and expel it, but their's a limit because that mass isn't part of their "morphogenic matrix."  I would assume they also convert some of this mass into energy, since they don't eat and all. I think the truth is, in many cases, the girl (and once in awhile the guy) aren't necesarily sure "how far they are willing to go" beforehand.  Alot of this is figured out on the fly.
