I think a big, big part of it would be how one reacts under pressure.  Part of the test for vulcans might be say, taking some drug that inhibits your emotional control, and seeing if you can still function (as we've seen in star trek, vulcans do have emotions, and they sometimes come out in weird ways)

Back then, there was sort of a knee jerk reaction from alot of trek fans against Deep Space Nine.  The complaint here seemed to be that it was turning star trek into a soap opera.  Honestly, looking back it, the knee jerk anti DS0 crowd didn't make a lot of sense.
