I've been to a few places featured, intentionally and unintentionally. I'd say my hit rate is about 80% having a good meal. Some places play up the Triple D thing, some places don't. Though I was pissed when he went to a hidden gem in my home town. It's even harder to get in now.
I think this why he's been working his eldest son into the show a lot recently.

A sandwich shop featured on Triple D came to my office to promote their catering service. Recognizing them from the show, I asked what filming was like. They said he was pretty normal and enthusiastic about their food. The only real artifice was the shirts, of which there were multiples.
