This article needed to be written, and Holmes must be held to account. If she gets off, will I be surprised? No. Will I be immensely angry that a snake oil huckster who endangered lives is getting special treatment? Hell yeah.

I made Hazan’s sauce once, terrible. Onion flavored tomato. Who in their right mind finds this good? Overpowering onion flavor and missing all of the delicious herb grandma used. 

Doing the passata works too and it’s easier / less work to do at large volume. We did that when I was a kid for most of the harvest. I tend to take the time to go straight to a reduced fully flavored sauce now for convenience’s sake when I need a quick cook as it’s a smaller scale.
