As I said to another user, yes, you let it thaw in the fridge before setting on the counter to reach proper temp. You don’t have to worry about bacterial growth if vacuum-sealed (why wasn’t it vacuum-sealed before it was frozen?), just a nice dip in the brine / marinade to room-temp before tossing into the fire.
Should have clarified a bit; yes, obviously let thaw in fridge before letting set and gain ambient temps. But yes, we both use the same method.

Letting the steak come to room temp allows the meat to cook uniformly. There’s a reason cooking any kind of frozen meat causes it to be tough; I can sear a steak just fine without freezing it first, and if you can’t manage that, maybe stick to TV dinners.
