Yeah, I think that’s exactly the reason why. Cutting into florets would make a better product (IMO), but it wouldn’t be as ‘satisfying’ for non-meat eaters, I guess, because it wouldn’t look like a main course. Though if one eschews meat, why does one need/want a dish that evokes a meat dish?

Same here. Never ate/didn’t like it because it was served either raw (which is just eh) or steamed (ugh). Then had it at Girl & the Goat in Chicago - Roasted Cauliflower with Pickled peppers, Pine nuts, and Mint. It was amazing! Now I’ll roast it at home usually just with olive oil, salt and pepper. It’s great.
