Also 0-100kph is 0-62 mph, so either they were testing with an automatic(presumably without a launch control) or there is a shift between 60 and 62 mph. 6.0-6.2 might be a little over-estimated, but I provided 5 test from 3 reputable automotive publications that all did 0-60

I could be wrong, but I think Dougs 360 actually is a stick, so the sport button probably doesn't do a whole lot on his.

For a car that is meant to be sporty they should add a "comfort" or "eco" button and leave it in "sports mode" as the standard config. I think that's the real solution here.

All the cars you drove that you're comparing it with are non-luxury cars. (With the exception of the genesis which is a standard midsize being marketed as a luxury car).

Why would they tone it down? I think that this is mostly a marketing and messaging change. Chrysler is trying to be a luxury brand, but they aren't. They compete against Toyota, Chevy, Dodge, Kia, Ford, etc. I see no reason they can't be marketed as a nicer mainstream car brand, but trying to be the luxury marque for
