Windows 8 has plenty of advanced features for enterprises - security, enhancements in remote desktop support (especially on a wan) etc,that make it interesting. User interface is what most users will notice, but the plumbing is really much better.

Same way as in windows 7 - change display resolution, and select the 'make this my main monitor' option. You'll have to reboot after this (or maybe just logoff/on). You need to have a minimum resolution of 1024x768 for that to work. If you have an external monitor, set it as the primary monitor and it will work too.
