Well, if servers were paid by the restaurants rather than the customers, then servers would be able to know their wage before accepting position, and they can take it or leave it. Restaurants charge 20% more for food. Extra money goes to servers. Consumers pay the EXACT SAME amount of money they previously would have with a 20% tip. Done.
