It seems to me that bartenders are given way more latitude to assert themselves.  In the US, bartenders are seen as “holding court” and the patrons are there at the bartender’s discretion.  Servers are expected to kiss ass. 

For me it was a VERY large (6'3" or taller) older customer coming up behind me and asking if he could be my sugar daddy. I tried to laugh it off and say he couldn’t afford me. So he started counting out hundreds....thank god for kitchens to hide in. I could have never made it as a bartender.
